Wholesome Edible Cookie Dough

a healthy cookie dough you can eat with a spoon and no regrets

Ingredients
  

  • 1 15.5 oz can garbanzo beans, drained and rinsed no salt added is preferred
  • 1/3 cup natural peanut butter
  • 1/3 cup rolled oats
  • 6 pitted dates
  • 2 Tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 2 Tbsp milk cow, almond, any type will do
  • 1/3 cup shredded coconut unsweetened
  • 1/3 cup mini chocolate chips

Equipment

  • food processor

Method
 

  1. Combine all ingredients, except the coconut and chocolate chips, in food processor. Blend on high until creamy.
  2. Add the coconut and chocolate chips and pulse until incorporated into the dough.
  3. The cookie dough is ready to eat immediately or can be stored in the refrigerator for up to a week.

Notes

Feel free to add any other mix-ins during the final step - nuts, dried fruit, etc.
